Can I add water if needed 3/4 way through the set it says not to open the lid?

Yep you can you just have to be quick and I do it at the hottest part of the day so the temp stays up high

Usually you only add water towards the end and they are not far off hatching so its ok to open just not when they start hatching

I have a cheap bellshouth one and its good at 100 but over it cooks the eggs so I keep the egg in the cool months so the temp is down

They are ok up to a max of 103 just not over that

Yes it can be hard.
A reminder that the fan in an incubator generates a fair amount of heat and on a hot day can actually be adding to the problem, particularly if eggs are in a late stage of development and also generating heat.
In that case if you can be on hand to monitor things it can be best to turn off the incubator and open it up.
