A sprinkle of lime will create an environment hostile to flies and thier larvae.
To put it in a composter is a good idea, the heat it creates is benificial to the composting process and will speed up the whole proceedure, it will also allow the poultry manure to break down and age as it is the fresh moist manure that if not carefully handled can burn tender plants and stems.
Once applied to the garden it must be kept moist and is very high in nitrogen so must be applied to plants only that need a high nitrogen fertiliser in the first instance and then rotate to a crop that will still gain benifit and not just run away into masses of top growth.
It is ideal for any green leafy veg like silver beet, I use it on heavy feeders like rhubarb and chokos and also on a number of vine crops , digging it in deep and well before I plant out into it.
Like I said before things grow like crazy and I'm sure it is to get away from it. [smilie=a_rolling.gif]

I mix in food scraps and water in a large drum with the chook poo and leave it 2 or 3 weeks then its ready for the veg garden
